Chocolate Covered Strawberry Martini Smoothie
Strawberries, vanilla ice cream, raspberry liqueur, and vanilla vodka come together in this "martini" smoothie. Garnished with grated chocolate and a fresh strawberry, it's a dessert and a cocktail.
I have a slightly decadent, adults-only, summer cocktail for you today. I’m calling it a Chocolate Covered Strawberry Martini Smoothie. Strawberries, vanilla ice cream, raspberry liqueur, and vanilla vodka are blended together and garnished with grated chocolate and a fresh strawberry. I realize it’s a stretch referring to this libation as a martini, but it looks so great served in a martini glass so I’m sticking with the name.
My “martini” features one of summer’s most treasured fruits – strawberries. This wonderful berry is packed with vitamin C and fiber; in fact, this cocktail has 2 grams of fiber. You won’t find fiber in a Manhattan or Cosmopolitan. Strawberries also add a nice sweetness to this cocktail, along with beautiful color.
Ice cream-based drinks typically use premium, full-fat ice cream, which results in a calorie-loaded cocktail. For this martini smoothie, I opted for a light vanilla ice cream. I’m a big fan of Edy’s (Dreyer’s on the west coast) light, slow churned ice cream. I find the texture to be very similar to full-fat ice cream. It’s rich and creamy, but with less fat and fewer calories. Edy’s light ice creams typically have 4 to 5 grams of fat and 130 to 150 calories per serving (2/3 cup). Compared to premium ice creams that can easily have 20 grams of fat and 350 plus calories, light ice creams are a nice alternative.
This pseudo martini contains both vodka and Chambord, a raspberry-flavored liqueur. Other fruit-flavored liqueurs that would work really well in this recipe include cherry, blueberry, blackberry, pomegranate, peach, mango, or melon. You could also amp up the chocolate flavor of this cocktail and use creme de cacao (a chocolate-flavored liqueur) in place of the Chambord. One final ingredient substitution idea – if you’re looking to make this cocktail a mocktail, replace the raspberry liqueur and vodka with a 1/2 cup of fruit juice. Orange, grape, pomegranate, cherry, pineapple, or cranberry juice are just a few ideas.

CHOCOLATE COVERED STRAWBERRY MARTINI SMOOTHIE
Yield: 4 servings
Serving Size: 1/2 cup martini smoothie

Ready: 10 minutes
INGREDIENTS
1 cup light vanilla ice cream (such as Edy’s Slow Churned Vanilla Bean Ice Cream)
2 cups frozen strawberries
1/4 cup raspberry liqueur (such as Chambord)
1/4 cup vodka, vanilla vodka preferred
2 tablespoons chocolate syrup (such as Hershey’s Chocolate Flavor Syrup)
4 teaspoons grated chocolate (for garnish)
4 fresh strawberries (for garnish)
DIRECTIONS
To a blender, add ice cream, strawberries, raspberry liqueur, and vodka. Blend until smooth.
To prepare one serving, drizzle a 1/2 tablespoon chocolate syrup into a martini glass. Pour a 1/2 cup of the smoothie cocktail into the glass, sprinkle top of cocktail with 1 teaspoon grated chocolate, and garnish with a fresh strawberry.
Cook’s note: You don’t need much chocolate to produce 4 teaspoons of grated chocolate. In fact, one little Hershey’s chocolate kiss will provide all the grated chocolate needed for this recipe.
