Creamy Garlic and Chive Dressing
Made with simple ingredients, this cool and creamy salad dressing is a garlic lover’s dream. Mince the garlic for a more measured kick or finely grate it for a maximum garlic punch.
Savory, pungent and slightly spicy — garlic is a staple ingredient in countless cuisines around the world. Of course it’s the star of the show in this recipe, adding depth, complexity, and an unmistakable punch to flavor this creamy garlic salad dressing.
Garlic, a member of the lily family, is related to leeks, chives, onions, and shallots. Although commonly used as an aromatic seasoning, garlic is technically classified as a vegetable. This mighty flavoring agent contains compounds being studied for potential health benefits. While the jury is still out on the actual impact of garlic on our health, some research suggests these beneficial compounds may improve hypertension, reduce cholesterol levels, provide cancer protection, and support immunity.
A garlic bulb or head, which grows beneath the ground, is made up of several small sections called cloves. The number of cloves in a bulb depends on the variety of garlic; a bulb of white garlic typically contains 10 to 15 cloves of garlic. Each clove is encased in its own parchment-like sheath, which is removed before slicing or chopping.
The way garlic is cut and cooked influences how strong and sharp it tastes — the finer the chop the stronger the taste. Garlic cloves can be used whole, crushed, sliced, chopped, minced, or grated. Cooking garlic softens its pungent bite, becoming more mellow the longer it’s cooked. However, overly browned or burnt garlic can taste very bitter.
When selecting garlic for today’s dressing recipe, choose firm, plump bulbs with dry, tight skins. Avoid heads with soft or shriveled cloves, and those stored under refrigeration. At home, store fresh garlic in an open container away from other foods in a cool, dark place. Properly stored, unbroken bulbs should last about eight weeks.

CREAMY GARLIC and CHIVE DRESSING
Yield: 8 servings
Serving Size: 2 tablespoons

INGREDIENTS
1/4 cup reduced-fat sour cream
1/4 cup mayonnaise
2 tablespoons minced fresh chives
1 to 2 cloves finely grated or finely minced garlic
1 teaspoon sugar
1 teaspoon white wine vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup low-fat buttermilk
DIRECTIONS
Add sour cream, mayonnaise, chives, garlic, sugar, vinegar, mustard, Worcestershire sauce, salt, and black pepper to a bowl and whisk until well combined. Add buttermilk and continue to whisk until combined and smooth.
Transfer dressing to a container with a lid and refrigerate at least 30 minutes before serving. Refrigerate leftover dressing and use within 5 to 7 days. Makes 1 cup dressing.
Cook’s note: If you want this dressing to be super-garlicky, finely grate the garlic using a zester.
