Mango Salsa
This colorful mango salsa is a sweet spin on classic tomato salsa. Fresh mango, red pepper, onion, jalapeño pepper, and cilantro are tossed in a tangy, slightly spicy lime vinaigrette – it’s so good!
Sweet, juicy, and nutrient-packed mangoes take the place of tomatoes in this delicious salsa. Mangoes are an excellent source of vitamin C, providing half of your daily need in a 3/4 cup serving. Vitamin C plays an important role in immune function and skin health. Mangoes deliver a nice dose of vitamin A, which helps maintain eye health. They also supply folate, a B vitamin that’s needed to support a healthy pregnancy.
According to the National Mango Board, the two growing seasons for this superfood overlap, which means they’re available year-round. The trick to making the best mango salsa is knowing how to pick the most flavorful mangoes.
Test for ripeness. Squeeze the mango gently. A ripe, ready-to-eat mango will give slightly, just like a ripe peach or avocado. A medium-ripe mango will be somewhat firm, and an unripe mango will be very firm to the touch.
Ripen at room temperature. When choosing mangoes that aren’t quite ripe, leave them at room temperature to ripen on their own. To speed up the ripening process, put the mangoes in a paper bag, close the top of the bag and allow them to ripen for a couple days at room temperature.
Don’t focus on the skin color. The color of the skin is not a good indicator of ripeness. Mangoes come in a variety of colors; from bright yellow to green depending on the type.
Try the smell test. A ripe mango will sometimes have a fruity aroma at its stem.
Store them properly. Store unripe mangoes at room temperature. Once ripe, place mangoes in the refrigerator and use within five days.
As for what to serve this fresh and fruity salsa with, tortilla or pita chips are an obvious choice. It also pairs nicely with crostini or crackers and can be served as a topping for grilled chicken, baked salmon, or tacos.

MANGO SALSA
Yield: 12 servings
Serving Size: 1/3 cup salsa

INGREDIENTS
3 cups diced fresh mango (2 to 3 mangoes)
1 cup diced red bell pepper
1/2 cup diced red or white onion
1 to 2 jalapeño peppers, finely diced
1/4 cup minced fresh cilantro
2 tablespoons fresh-squeezed lime juice
1 tablespoon white wine vinegar
1 tablespoon agave syrup or honey
1 clove garlic, minced
3/4 teaspoon Chile lime seasoning blend (such as Trader Joe’s Chile Lime Seasoning Blend or Tajin® Clasico)
1/2 teaspoon kosher salt
DIRECTIONS
In a large bowl, place mangoes, red pepper, onion, jalapeño pepper, and cilantro.
In a small bowl, whisk together lime juice, vinegar, agave syrup, garlic, Chile lime seasoning blend, and salt. Pour lime dressing over mango mixture, gently stir to combine, and serve.
This mango salsa is wonderful with tortilla or pita chips, crostini, or whole-grain crackers. It’s also a delicious topping for grilled chicken, baked salmon, or tacos.
Cook’s note: A 15-ounce whole mango will yield about 1 1/2 cups diced mango.
