Peach and Blueberry Crisp
Filled with juicy peaches and plump blueberries, this crisp features the freshest, sweetest fruits summer has to offer. The buttery oat and brown sugar topping definitely ups the delicious factor.
One of the best things about summer is the abundance of fruit that fills grocery stores, farmer’s markets, and roadside stands. I’m starting to see, and more importantly smell, delicious peaches, so I decided to feature them in this easy, summer crisp recipe.
Peaches are typically classified as clingstone or freestone. As the names imply, clingstone peach flesh clings to the pit, and the flesh of freestone peaches is easily removed from the pit. Freestone peaches are perfect for today’s recipe because they’re easier to slice. I like to make a cut starting at the stem end and work all the way around the middle of the peach, slicing it in half. Gently hold each half and twist your hands away from each other. If you’re lucky, one half of the peach comes completely off the pit and the other half can be easily removed from it.
A large peach provides a handful of nutrients including vitamin C, beta carotene, and potassium for about 80 calories each. Known for supporting a healthy immune system, vitamin C is important for healing wounds. Beta carotene is an essential nutrient for eye health. According to the American Heart Association, potassium is important in controlling blood pressure because it appears to reduce the effects of excess sodium in the diet.
Buy peaches that are ripe or nearly ripe for the best flavor. They should give a little when gently pressed and have a sweet, peachy scent. Avoid those with bruises, soft spots, or green undertones, which indicate the peach was picked too soon. Store unripe peaches at room temperature until they are soft to the touch. Ripe peaches should be refrigerated and eaten within a week.
You can certainly feature just peaches in this crisp recipe, but with blueberries also being in season, I thought why not add them as well. I think the color combination of the peaches and blueberries is stunning.

PEACH and BLUEBERRY CRISP
Yield: 8 servings
Serving Size: about 2/3 cup

INGREDIENTS
Vegetable oil cooking spray
4 cups sliced fresh peaches
2 cups fresh blueberries
1/2 cup granulated sugar
2 tablespoons corn starch
1 teaspoon orange zest
1/2 teaspoon vanilla extract
2/3 cup old-fashioned rolled oats
1/4 cup packed brown sugar
1/4 cup all-purpose flour
1/4 teaspoon kosher salt
2 tablespoons spreadable butter and oil blend (such as Challenge Spreadable Butter)
DIRECTIONS
Preheat oven to 350 degrees F. Spray a 10-inch round oven-safe baking dish with cooking spray; set aside.
To prepare the filling, place peaches and blueberries in a large bowl. In a small bowl, stir together granulated sugar and corn starch until well combined. Add to the peaches and blueberries and stir until sugar and corn starch mixture evenly coats the fruit. Add orange zest and vanilla extract to fruit mixture, stir to combine, and allow fruit to sit while preparing crumb topping.
To prepare the crumb topping, place the oats, brown sugar, flour, and salt in a medium-size bowl and stir to combine. Using a pastry cutter or fork, cut in butter and oil blend until mixture becomes crumbly.
Place peach and blueberry mixture and all accumulated liquid in prepared baking dish. Top with crumb mixture. Bake 35 to 40 minutes or until crumb topping is golden brown and peach and blueberry mixture begins to bubble. Serve warm or at room temperature.
