Sloppy Joes
Ready in about 30 minutes, these Joes are perfect for a weeknight dinner. Go the traditional route and serve it on a bun or set a new trend and have a Sloppy Joe-topped baked potato.
Kudos to my husband for this recipe, as it’s very similar to the one he’s followed for years. One unique ingredient that he uses, which gives these sloppy joes a nice subtle zing, is horseradish.
Interestingly, the bite and aroma of the horseradish root are virtually nonexistent until the root is grated or ground. Crushing the root cells releases the volatile oils that give horseradish its familiar kick.
Horseradish is usually purchased grated and bottled and referred to as prepared horseradish. Bottled horseradish will be light beige if preserved in vinegar, or red if preserved in beet juice. As bottled horseradish ages, it darkens in color and loses its pungency.
Bottled horseradish is one of those seasoning ingredients that provides maximum flavor without a lot of sodium. One tablespoon has just 65 milligrams of sodium. We used two tablespoons of horseradish in today’s recipe. But don’t worry, that amount in this recipe will not cause a sinus-clearing reaction often associated with this pungent condiment.

SLOPPY JOES

Serving Size: 1/2 cup Sloppy Joe mixture on one bun

INGREDIENTS
1 pound ground sirloin (90% lean/10% fat)
1/2 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 tablespoons prepared horseradish
1 tablespoon Worcestershire sauce
1/2 teaspoon granulated garlic or garlic powder
1/2 teaspoon celery seed
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 can (6 ounces) tomato paste
1/2 cup water
6 (2 ounces each) whole-wheat hamburger buns
DIRECTIONS
In a large skillet over medium heat, cook beef until crumbly and no longer pink; about 5 minutes. Drain and discard excess fat from the cooked beef. Add onion and green pepper to the skillet with the beef and continue to cook until vegetables begin to soften; about 5 minutes.
To the beef mixture, add brown sugar, vinegar, horseradish, Worcestershire sauce, granulated garlic, celery seed, salt, and black pepper. Stir to combine and continue cooking until all the liquid is absorbed; about 3 to 4 minutes.
Add tomato paste and water, stir to combine, and continue to cook until heated through. Serve warm on a whole-wheat hamburger bun.
