Summer Salad Roundup
Summer salad season is in full swing, and I've rounded up six of my favorite recipes to share with you. Fresh and flavorful, these salads are perfect for weeknight dinners or outdoor entertaining.
Just in time for Fourth of July celebrations, I’m highlighting six of my favorite summer salads. From a grilled corn salad infused with the flavors of Mexican street corn, to a nostalgic Italian potato salad, these outrageously delicious, potluck-worthy salads are sure to get rave reviews.
#1 — MEXICAN STREET CORN SALAD
A fun twist on a popular Mexican street food, this Mexican Street Corn Salad is a delicious way to showcase sweet, summertime corn. This grilled corn salad calls for Tajin® (ta-HEEN) Clásico; a seasoning blend that contains a mix of dried and ground mild red chilies, sea salt, and dehydrated lime juice. The flavor profile is tangy, citrusy, and salty with mild heat.
#2 — SUMMER FARRO SALAD
If you’ve been trying to add more whole grains to your diet but have had your fill of brown rice and quinoa, let me introduce you to farro (FAHR-oh). One of the earliest cultivated whole grains, farro is a type of wheat. Also referred to as emmer wheat, this grain has a very mild, slightly sweet flavor and adds great texture to this crisp and colorful salad.
#3 — NONNA’S POTATO SALAD
This version of potato salad might be a bit out of your “potato salad box,” but boy oh boy, is it delicious. Commonly referred to as Italian potato salad, this is what my Italian husband grew up eating and it’s the only kind of potato salad our son will request I make. Dressed in a vibrantly tangy vinaigrette, and seasoned with lots of garlic, this summer side dish is fantastic with grilled chicken or burgers.
#4 — GREEN and RED CABBAGE SLAW with GINGER PEANUT DRESSING
Sliced green and red cabbage, shredded carrots, green onion, and peanuts come together in this crisp, crunchy slaw. Everything is tossed in a savory, Asian-inspired dressing featuring creamy peanut butter and fresh ginger. It’s a flavor explosion for sure!
#5 — CLASSIC MACARONI SALAD
I think everyone needs a go-to, classic macaroni salad for summer dining. Chopped veggies add crunch and color to this creamy, yet light, pasta salad. Reduced-fat sour cream partially replaces some of the mayonnaise to create a lightened dressing that’s rich, creamy, and delicious.
#6 — CHOPPED ANTIPASTO SALAD
This salad has it all – artichoke hearts, mushrooms, bell peppers, cucumbers, cherry tomatoes, red onion, kalamata olives, and mozzarella cheese. Tossed in a simple golden balsamic vinaigrette, this colorful salad is a definite crowd pleaser.
