White Pizza Palmiers
Served warm or at room temperature, these White Pizza Palmiers will be one of the first appetizers to disappear at your holiday party.
It’s the last recipe of 2022, and I’m in total New Year’s Eve appetizer mode. If you’re looking for an easy, yet upscale looking hors d’oeuvre to serve or take to a party, check out these White Pizza Palmiers.
A palmier (pahl-me-ay) is a classic French pastry made from puff pastry and sugar. Also known as elephant ear cookies or palm leaf cookies, traditional sweet palmiers are delicately crisp, buttery, and flaky. Palmiers can also take on a savory spin like today’s pizza palmiers.
Puff pastry is the star ingredient in sweet and savory palmiers. It’s a laminated dough which means butter is rolled and folded into a dough multiple times, creating alternating layers of butter and dough. Once baked, puff pastry resembles a croissant in that lots of thin, buttery, flaky layers form.
As you can imagine, puff pastry supplies a hefty dose of saturated fat and calories. My husband came up with the idea to use pizza dough in place of puff pastry for today’s appetizer. My concern was that regular pizza dough would not be thin enough to create a nice, tightly rolled palmier. Then, I noticed Pillsbury had a thin and crispy pizza crust dough in a tube. I decided to give it a try and lo and behold, it worked perfectly.
From a “healthier recipe” standpoint, let me share the numbers on this pizza dough for puff pastry ingredient swap. The 8-ounce thin and crispy pizza dough I used contains 585 calories and 2 grams of saturated fat. Eight ounces of store-bought puff pastry has 885 calories and 28 grams of saturated fat. Put another way, the pizza dough has 34 percent fewer calories and 93 percent less saturated fat than the puff pastry. That’s amazing!

WHITE PIZZA PALMIERS
Yield: 24 servings
Serving Size: 1 palmier
Prep: 15 minutes
Ready: 30 minutes
INGREDIENTS
Parchment paper
1 cup (3 ounces) shredded part-skim mozzarella cheese
6 tablespoons grated Parmesan cheese, divided
1/4 cup reduced-fat mayonnaise
2 tablespoons real bacon bits or pieces
1 teaspoon minced fresh oregano
1 garlic clove, minced
1/8 teaspoon black pepper
1 tube (8 ounce) refrigerated pizza crust dough (such as Pillsbury Thin and Crispy Pizza Crust dough)
2 tablespoons diced green pepper
2 tablespoons diced red onion
1/8 teaspoon granulated garlic or garlic powder
DIRECTIONS
Preheat oven to 425 degrees. Line a baking sheet with parchment paper; set aside.
In a large bowl, stir together mozzarella cheese, 3 tablespoons Parmesan cheese, mayonnaise, bacon bits, oregano, garlic, and black pepper.
Unroll pizza crust dough onto a separate sheet of parchment paper and gently spread entire surface with cheese mixture. Top cheese mixture with green pepper and red onion. Gently roll each long end of the dough to the center of the dough, making sure to roll as tightly and evenly as possible.
Carefully slide rolled dough with parchment underneath onto a cutting board. Using a serrated knife, gently cut dough roll crosswise into 24, 1/4-inch slices. Place each slice, about 2 inches apart, onto parchment-lined baking sheet.
In a small bowl, combine remaining 3 tablespoons Parmesan cheese and granulated garlic. Sprinkle tops of palmiers with Parmesan cheese and garlic mixture and bake for 12 to 14 minutes or until golden brown. Serve warm or at room temperature.
