This soup is excellent! I first had it at my friend’s house and it was delicious! I have sodium restrictions so when I made it at home I used reduced sodium kidney beans, no salt added vegetable broth and no added salt at all - and it was still delicious! There are so many other flavors I did not miss the sodium at all. I have never had the baby spinach in a soup before - and love it! I found it easy to make and fast enough we could make a double recipe for an Easter family gathering with no problem. Thanks for this awesome recipe!
Hi Chris! Thanks for the comments about my Minestrone Soup. I’m glad you took the additional steps to lower the sodium. When developing healthier recipes I try to appeal to the masses and am so glad that you were able to make additional adjustments so that the recipe would better fit your specific dietary concerns. This soup does freeze well so it never hurts to make a double batch😉. Glad you got to try at your friend’s house.
I made this soup today. The recipe was easy to follow and most of the ingredients were in my refrigerator or pantry. The soup went together very quickly and the house smells amazing. The only thing better is the flavor. I think this will be a regular in my dinner rotation. Thank you Darlene. Side note, I did not have either pasta that was called for but simply subbed in bow ties and voila! So good!
